This is an Inspiralized recipe. I love finding different things to do with zoodles to keep things fun in the kitchen!
3 zucchini, spiralized with thin noodle blade
2 tomatoes, cut into thick slices
Garlic clove, minced
Basil leaves, sliced
After you spiralized the zucchini, you can cook it on the stove while broiling the tomatoes in the oven. Make sure you can multitask before doing that, or your tomatoes will get crispy or you’re zoodles runny!
On her website, she suggests adding tuna or chicken on the tomato before adding the cheese. It adds a bit of protein to the dish if you are making it for dinner. I think I want to try using sausage next time. In the picture above I used a bit of tuna. It was delicious! I garnished mine with crushed red pepper flakes.
